Rhubarb and Apple Crisp

I love rhubarb but if you can’t find it or you don’t like it, you can replace it for strawberries or any other fruit.

For the filling:

  • 1 pound rhubarb, cut in 1/2 inch pieces
  • 2 apples, peeled and cut in 1/2 inch cubes
  • 3/4 cup sugar
  • 3 tablespoons flour
  • juice and zest of one lemon

For the topping:

  • 1 cup flour
  • 1 cup walnuts, grounded
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 cup butter, cold and cut in pieces

Butter a baking dish pan or ramekins for individual servings.

To make the filling, mix all the ingredients together in a mixing bowl and let it sit until the juices from the fruit have released.

To make the topping, mix all the dry ingredients together. Press the butter into the flour mixture. Work it out until you obtain a crumbly mixture.

Preheat the oven to 350F. Place the filling into the baking dish (or the ramekins for individual servings). Add the topping over the fillings. Bake for about 45 minutes.
