I have been experimenting with muffins recipes for a bake sale that my son is organizing with his friend. Among all the recipes we tested (carrot, blueberry, oatmeal, etc), this one with apples was his favorite one. I thought you may like to make them as well. These muffin are best served warm. You can reheat them before serving them. They keep well for a week in the refrigerator.
- 4 ounces butter, room temperature
- 3/4 cup brown sugar
- 2 eggs, room temperature
- 1 cup flour
- 1/2 cup almond flour
- 1 tablespoon flaxseed meal
- 1/2 teaspoon sea salt
- 1 1/2 teaspoon cinnamon
- 1 teaspoon ginger
- 3 apples, peeled and grated
Preheat the oven to 350 Fahrenheit. Line a muffin pan with paper cups. In a mixing bowl mix the butter with the sugar until soft and creamy. Add one egg at the time, mixing everything together after each egg adition. In another bowl, mix all the dry ingredients together. Add the dry ingredients to the and mix until combined. Add the grated apples butter mixture and stir them in.
Use a cookie scoop to place batter into the muffin cups, almost to the top.
Bake for 30 minutes until the top of the muffins are golden brown.
